Instructions

-Preheat your oven: Preheat your oven to 350ยฐF (175ยฐC) and prepare a cake pan by greasing it or lining with parchment paper for easy removal later.

-In a mixing bowl: combine the dry ingredients: 1 1/2 cups almond flour, 1/2 cup all-purpose flour, 1/2 teaspoon kosher salt, 1/4 teaspoon ground cardamom if using, and 1 1/2 teaspoons baking powder. Mix them well to avoid lumps.

-In another bowl: cream together the wet ingredients: Beat 1/2 cup softened unsalted butter and 1 cup granulated sugar until light and fluffy, then add 2 large eggs, 1/2 cup Greek yogurt, 1 1/2 teaspoons vanilla extract, and 1/4 teaspoon almond extract if desired.

-Slowly fold the dry mixture into the wet ingredients, stirring gently until just combined to keep the batter airy.

-Prepare the toppings by slicing 2 apricots into 1/4-inch pieces and measuring out 3 tablespoons sliced almonds.

-Pour the batter into the prepared pan, then top with the sliced apricots and almonds for a beautiful finish.

-Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before dusting with powdered sugar.
