Ingredients

– 10 slices bacon

– 2 jalapenos (green parts only, seeds and ribs removed)

– 8 ounces cream cheese, room temperature

– 1 cup shredded cheddar cheese

– 8 egg roll wrappers

– Vegetable oil (enough to fill a small pan 1 inch deep)

– Jalapeno jelly for dipping

– Sweet Thai chili sauce for dipping

– Ranch dressing for dipping

Instructions

1-First, cut the 10 slices of bacon into bite-size pieces and cook them in a skillet over medium heat for about 5 minutes until they’re brown and crispy. Once done, drain them on paper towels to remove excess grease. This step adds that smoky flavor we all love.

2-Next, finely dice the green parts of the 2 jalapenos, making sure to discard the seeds, stem, and white ribs to control the heat. In a bowl, mix the cooked bacon, diced jalapenos, 8 ounces of cream cheese, and 1 cup of shredded cheddar cheese until everything is well combined. This filling is the heart of the recipe!

3-Now, lay one egg roll wrapper flat with one corner facing you and spoon the filling onto the center. Wet the edges with water, fold the sides in towards the center, then fold the corner closest to you over the filling and roll it tightly into an egg roll shape. Repeat for all 8 wrappers.

4-Heat the vegetable oil in a pan to 350 degrees Fahrenheit. Fry 2 to 3 egg rolls at a time for 1 to 2 minutes per side until they’re golden brown and crispy. Drain them on paper towels and serve immediately with your choice of dipping sauce. For a healthier option, you can bake them at 400 degrees Fahrenheit for about 15-20 minutes, flipping halfway through.
