๐Ÿฅ” Transform ordinary potatoes into an extraordinary comfort food masterpiece with this loaded casserole that combines creamy cheese, crispy bacon, and all your favorite baked potato toppings
๐Ÿง€ Create a crowd-pleasing dish that’s perfect for family gatherings and potlucks – the golden cheesy crust and tender potato interior make every bite absolutely irresistible

  • Total Time: 1 hour
  • Yield: 12 servings

Ingredients

– 6 large russet potatoes (about 5 pounds)

– 1/4 cup unsalted butter

– 4 ounces cream cheese

– 2/3 cup sour cream

– 1/2 cup milk (2% or any available)

– 1/2 teaspoon garlic powder

– salt and pepper to taste

– 2 cups shredded cheddar cheese

– 1 1/2 cups cooked and crumbled bacon

– 1/4 cup diced green onions

Instructions

1-First, preheat your oven to 375ยฐF and grease a 9×13-inch casserole dish. This step ensures even cooking and prevents sticking, making your baked potato casserole turn out perfectly. Wash, peel, and dice the potatoes into larger chunks for the best texture.

2-Next, boil the diced potatoes until they’re tender, which usually takes about 10-15 minutes. Once done, drain them and return to the pot to keep things simple. Gently fold in the unsalted butter, cream cheese, sour cream, and milk, taking care not to mash the potatoes for that ideal bite.

3-After mixing, add the garlic powder, salt, pepper, 1 1/2 cups of the cheddar cheese, and 1 cup of the bacon. Stir everything gently to blend the flavors without overworking the mix. Transfer the mixture to your greased casserole dish and top it with the remaining cheese and bacon for those crispy toppings.

4-Bake the casserole for 25 to 30 minutes until it’s bubbly and golden on top.

5-Once baked, garnish with the diced green onions for a fresh finish.

Notes

๐Ÿฅ“ Use precooked bacon to save time and ensure crispy texture – you can cook it ahead and store in the refrigerator
๐Ÿ”ช Boil potatoes in larger chunks to maintain texture and prevent them from becoming mushy in the final casserole
๐Ÿ‘† Fold ingredients gently rather than mashing to keep potato chunks intact for the perfect casserole texture
