  • Total Time: 40 minutes
  • Yield: 4 servings

Ingredients

– 1 Β½ lbs. sirloin tips for the beef

– 3 tablespoons flour for coating

– 3 tablespoons olive oil for cooking fat

– 1 teaspoon brown sugar for beef seasoning

– ΒΌ teaspoon black pepper for beef seasoning

– Β½ teaspoon salt for beef seasoning

– Β½ teaspoon garlic powder for beef seasoning

– Β½ teaspoon onion powder for beef seasoning

– Β½ teaspoon chili powder for beef seasoning

– Β½ teaspoon paprika for beef seasoning

– ΒΌ cup dry red wine optional, for gravy

– 2 tablespoons butter for gravy

– 1 small yellow onion, diced for gravy

– 3 cloves garlic, minced for gravy

– 2 cups beef broth for gravy

– 1 beef bouillon cube for gravy

– 1 Β½ teaspoons Worcestershire sauce for gravy

– ΒΌ teaspoon dried thyme for gravy

– ΒΌ teaspoon dried rosemary for gravy

– 1 teaspoon onion powder for gravy

– Β½ teaspoon garlic powder for gravy

– 3 tablespoons cornstarch mixed with ΒΌ cup cold water for gravy thickening

Instructions

First, combine all the beef seasoning ingredients in a bowl.

Then, measure out everything for the gravy to keep things organized. This prep step makes the whole process feel effortless and helps avoid any last-minute rushes.

Next, cut the beef into 1-inch cubes and trim off any large fat pieces. Toss the beef in the seasoning mix, sprinkle it with flour, and toss again for an even coat. This step locks in those tasty flavors and gives the beef a nice texture.

1 Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef in batches for 30-45 seconds per side until browned but not fully cooked. Set the beef aside to rest.

2 If using, add ΒΌ cup dry red wine to the skillet to deglaze, scraping up the brown bits. Let it reduce by half for added depth.

3 Lower the heat to medium, add 2 tablespoons butter and the diced onion, and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute.

4 Add the remaining gravy ingredients except the cornstarch mixture, like 2 cups beef broth and 1 Β½ teaspoons Worcestershire sauce. Bring it to a boil for a minute or two.

5 Slowly whisk in the cornstarch mixture until the gravy thickens, stirring constantly to avoid lumps.

6 Reduce heat to medium-low, return the beef and its juices to the pan, and partially cover. Cook for 10-15 minutes until the beef is done. Optionally, stir in 1 tablespoon cold butter for extra smoothness.

7 Serve it hot with sides like mashed potatoes. For a different method, try the Crock Pot version: Season and sear as above, then transfer to a crock pot and cook on low for 7-8 hours.
