๐Ÿช Indulge in the rich, fudgy texture of Buckeye Brownie Cookies, combining classic peanut butter and chocolate flavors in every bite.
๐Ÿซ Perfect for peanut butter lovers, these cookies offer a sweet, creamy center topped with luscious dark chocolate for a delightful treat.

  • Total Time: 42 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale

1 box fudge brownie mix (19.5 ounces, family size, designed for a 9ร—13 inch pan)

1/4 cup salted butter, melted and very soft

4 ounces full-fat cream cheese, softened

1 large egg

1 cup powdered sugar

1 cup creamy peanut butter (full fat preferred)

4 ounces dark chocolate melting wafers or dark/semi-sweet chocolate chips

Instructions

1-Preheat oven: Preheat oven to 350ยฐF. Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.

2-Mix dough: In a medium bowl, combine the brownie mix, melted butter, cream cheese, and egg. Mix with a hand mixer until a sticky dough forms, which takes about 2 minutes.

3-Form dough balls: Using a cookie scoop, form about 24 dough balls and smooth the edges to shape them into rounds. Place them on the prepared baking sheet, spacing them evenly.

4-Bake cookies: Bake the cookies for 12 minutes, keeping a close eye to avoid over- or under-baking for that perfect fudgy center.

5-Prepare peanut butter balls: While the cookies bake, mix the powdered sugar and peanut butter with a hand mixer until fully combined, then roll the mixture into 24 balls about 1 inch in diameter.

6-Add peanut butter centers: Right after taking the cookies out of the oven, gently press one peanut butter ball into the center of each warm cookie to create that signature filling.

7-Cool cookies: Let the cookies cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely and set.

8-Melt chocolate: Melt the chocolate in a microwave-safe bowl, heating in 30-second increments and stirring between each until smooth and glossy.

9-Add chocolate topping: Spoon about half a tablespoon of melted chocolate over each cookie to cover the peanut butter center, then let it set before enjoying.
