Ingredients
– ΒΌ lb salted butter
– 2 sprigs fresh oregano
– 4 cloves garlic, minced
– ΒΌ cup olive oil, plus more as needed
– 12 slices Italian bread, sliced Β½ inch thick
– ΒΎ lb mozzarella cheese, shredded
– 1 Β½ lb heirloom tomatoes, sliced ΒΌ inch
– ΒΎ lb fresh mozzarella, sliced ΒΌ inch
– fresh basil (3-4 leaves per sandwich)
– flaky sea salt
Instructions
1-Heat a small saucepan over medium heat. Add the butter and oregano sprigs, and let the butter melt. Reduce the heat to low, stir in the garlic, and cook for 2-3 minutes until the garlic is toasted. Turn off the heat and mix in the olive oil.
2-Brush the garlic butter mixture on each slice of bread. On the bottom slices, layer the shredded mozzarella, followed by the tomato slices with a pinch of salt, then the fresh mozzarella slices with another pinch of salt, and finally the basil leaves. Close the sandwiches with the top bread slices.
3-Heat a 12-inch skillet over medium heat and add enough olive oil to coat the bottom. Cook three sandwiches at a time until the bread is golden and crisp on one side, about 2 minutes.
4-Drizzle more olive oil over the sandwiches, flip them gently with a spatula, cover with a lid, and cook for a few more minutes until the second side is golden and the cheese is melted. Keep the cooked sandwiches warm by covering them with foil. Repeat the process with the remaining sandwiches.
5-Cut the sandwiches in half and top with flaky sea salt and additional fresh basil.
