– 1 pound ground beef

– 1-ounce packet taco seasoning
– 1/2 cup water
– 1 cup cooked rice
– 1 cup shredded cheddar cheese
– 1 cup shredded mozzarella cheese
– 4 large flour tortillas
– 1 cup salsa
– 1/4 cup chopped fresh cilantro (optional garnish)
– 1/2 cup sour cream (served on the side)
Instructions
1-Heat a skillet over medium heat. Add 1 pound ground beef, 1/2 cup chopped onion, and 2 cloves minced garlic. Cook until beef browns and onions soften, about 8 minutes. Drain excess fat.
2-Stir in 1-ounce packet taco seasoning and 1/2 cup water. Simmer 5 minutes until thickened and flavorful.
3-Prepare 1 cup cooked rice if needed; set aside.
4-Warm 4 large flour tortillas in microwave or skillet to make pliable.
5-Assemble: On each tortilla, layer 1/4 cup rice, beef mixture, 1/4 cup shredded cheddar cheese, and 1/4 cup shredded mozzarella cheese. Fold sides and roll tightly.
6-Place in baking dish, top with 1 cup salsa. Bake at 375Β°F (190Β°C) for 20 minutes until bubbly and melted.
7-Garnish with 1/4 cup chopped fresh cilantro if desired. Serve with 1/2 cup sour cream on side.
