Ingredients

– 1 box lasagna noodles, cooked and drained according to package directions and laid out individually on parchment paper

– 1 24-ounce bag frozen spinach, defrosted and drained very well

– 1 16-ounce container cottage cheese or ricotta cheese

– 2 cups shredded cheese of any kind, plus more for sprinkling

– 1 24-ounce jar marinara sauce

Instructions

1-First, preheat your oven to 350 degrees Fahrenheit and cook the lasagna noodles according to package directions until they’re just right. Drain them and lay them out individually on parchment paper to keep them from sticking.

2-Next, in a bowl, mix the defrosted and well-drained spinach with the cottage cheese or ricotta cheese and 2 cups of shredded cheese to create a creamy filling.

3-Then, pour about three-quarters cup of marinara sauce into the bottom of a 9 by 13-inch baking pan, making sure it covers the entire bottom evenly.

4-Spread about one-quarter cup of the cheese and spinach mixture onto each lasagna noodle, roll it up, and place it seam-side down in the pan. Keep going until the pan is full.

5-Finally, pour the remaining marinara sauce over the roll-ups and sprinkle with additional shredded cheese. Cover the pan and bake for one hour until it’s bubbly and heated through.
