Ingredients

– 2 pounds ground chicken

– 1 egg

– 1/4 cup plain bread crumbs

– 2 teaspoons minced onion

– 1 1/2 teaspoons garlic powder

– 1/2 teaspoon dried parsley

– 1 1/2 teaspoons salt

– 1/2 teaspoon ground black pepper

– 1/4 cup mayonnaise

– 6 slices ham

– 6 slices Swiss cheese

– 3/4 cup fresh or panko breadcrumbs for topping

– 3 tablespoons butter for Creamy Dijon Gravy

– 3 tablespoons flour for Creamy Dijon Gravy

– 1/4 cup heavy cream for Creamy Dijon Gravy

– 1 cup skim or 1% milk for Creamy Dijon Gravy

– 1 teaspoon Worcestershire sauce for Creamy Dijon Gravy

– 1 tablespoon dijon mustard for Creamy Dijon Gravy

– 1/2 cup grated parmesan cheese for Creamy Dijon Gravy

– 1/4 teaspoon freshly grated nutmeg for Creamy Dijon Gravy

– Pinch of salt and pepper for Creamy Dijon Gravy

Instructions

1-Preheat your oven to 400ยฐF.

2-Mix 2 pounds ground chicken with 1 egg, 1/4 cup plain bread crumbs, 2 teaspoons minced onion, 1 1/2 teaspoons garlic powder, 1/2 teaspoon dried parsley, 1 1/2 teaspoons salt, 1/2 teaspoon ground black pepper, and 1/4 cup mayonnaise in a bowl.

3-Spray a 9″x5″ loaf pan and spread half of the chicken mixture evenly on the bottom.

4-Layer with three slices of ham and three slices of Swiss cheese, then add another layer of three slices of ham and three slices of Swiss cheese.

5-Spread the remaining chicken mixture on top evenly.

6-Bake for 25 minutes, then sprinkle 3/4 cup fresh or panko breadcrumbs on top.

7-Return to the oven for 15 more minutes, covering with foil if the breadcrumbs brown too fast.

8-For the gravy, melt 3 tablespoons butter in a saucepan, whisk in 3 tablespoons flour, and cook for one minute. Add 1/4 cup heavy cream, 1 cup skim or 1% milk, 1 teaspoon Worcestershire sauce, and 1 tablespoon dijon mustard, then simmer until thickened.

9-Stir in 1/2 cup grated parmesan cheese, 1/4 teaspoon freshly grated nutmeg, and a pinch of salt and pepper.

10-Let the meatloaf rest for 10 minutes before slicing.

11-Serve with the gravy spooned on top or on the side.
