– 2 large eggs (room temperature recommended)

– 2 teaspoons vanilla extract

– 1 cup boiling water

Instructions

1-Preheat oven to 350ยฐF (175ยฐC). Prepare two 9-inch cake pans by greasing and flouring or using a pan release method to ensure the cake doesn’t stick.

2-In a large bowl, whisk together 2 cups all-purpose flour, 2 cups sugar, 3/4 cup unsweetened cocoa powder, 2 teaspoons baking powder, 1 1/2 teaspoons baking soda, 1 teaspoon salt, and 1 teaspoon espresso powder until everything is well combined.

3-Add 1 cup milk, 1/2 cup vegetable oil, 2 large eggs, and 2 teaspoons vanilla extract; mix on medium speed until the ingredients blend smoothly.

4-Reduce speed and carefully add 1 cup boiling water, mixing until incorporated the batter will be thin, and that’s exactly how it should be for a moist result.

5-Divide the batter evenly between the prepared pans, making sure it’s spread out nicely for even baking.

6-Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean, signaling the cake is done.

7-Cool the cakes in the pans for about 10 minutes, then remove them and let them cool completely on a wire rack before adding any frosting.
