  • Total Time: 3 hours 30 minutes
  • Yield: 10 servings

Ingredients

– 2 tablespoons salted butter

– 1 1/4 cups roughly chopped pecans

– 1/2 cup unsalted butter

– 8 ounces cream cheese, at room temperature

– 1 egg, at room temperature

– 1 egg yolk, at room temperature

– 2 1/2 cups powdered sugar

– 1 cup plus 2 tablespoons all-purpose flour, spooned and leveled

– 3/4 teaspoon baking powder

– 1/8 teaspoon baking soda

– 1/4 teaspoon salt

– 3/4 cup granulated white sugar

– Brown butter from above

– 1 egg, at room temperature

– 1 egg yolk, at room temperature

– 1 1/2 teaspoons vanilla extract

– 1 tablespoon bourbon (optional)

– 1/2 cup buttermilk, at room temperature

– 1 cup granulated white sugar

– 5 tablespoons salted butter, at room temperature

– 1/2 cup heavy cream, at room temperature

– 1 teaspoon vanilla extract

– 1/4 to 1/2 teaspoon salt

– Additional toasted pecans for topping

Instructions

1-First, toast the pecans in melted butter to bring out their nutty flavor.

2-Next, brown the butter by heating it until it turns golden, which adds a deep, rich taste to the cake batter.

3-Then, for the gooey cream cheese layer, smooth the cream cheese with eggs and powdered sugar until it’s creamy and ready to use.

4-In another bowl, whisk the dry ingredients like flour, baking powder, and salt together.

5-Cream the sugar with the brown butter, add the eggs, vanilla, and bourbon if you like, then alternate adding the dry mix and buttermilk to form the batter.

6-Pour the batter into a greased 9-inch springform pan lined with parchment paper.

7-Top it with the toasted pecans and then spread the cream cheese layer on top.

8-For the salted caramel sauce, melt the sugar until golden, stir in butter, cream, vanilla, and salt, and simmer briefly before letting it cool.

9-Pour the caramel over the chilled cake and add reserved pecans on top.

Notes

โฐ Avoid over-baking the cake to maintain the signature gooey texture – the center should still have a slight jiggle when done
๐ŸŽฏ Use a springform pan for easy removal and presentation – this prevents the delicate layers from breaking during serving
โ„๏ธ Allow proper cooling and chilling time for the cream cheese layer to set – this ensures clean slices and the perfect texture contrast
