Ingredients

– 3 pounds red potatoes

– 1 tablespoon liquid shrimp and crab boil (optional, for added flavor)

– 1 tablespoon apple cider vinegar

– 3/4 teaspoon Creole seasoning (plus extra for sprinkling)

– 1/3 cup mayonnaise

– 1/3 cup sour cream

– 1/3 cup Creole mustard

– 1 teaspoon sugar

– 1 finely chopped celery stalk

– 3 hard-boiled eggs (chopped)

– 3 sliced green onions

– 1 tablespoon chopped fresh parsley

– Salt and pepper to taste

Instructions

1-Boil the Potatoes: Wash 3 pounds red potatoes and cut into chunks. Place in a large pot, cover with water, and add 1 tablespoon liquid shrimp and crab boil if using. Bring to a boil, then simmer 15-20 minutes until tender but firm. Drain well.

2-Toss with Seasoning: While warm, gently toss potatoes with 1 tablespoon apple cider vinegar and 3/4 teaspoon Creole seasoning. Let cool slightly. This step locks in flavor.

3-Make the Dressing: In a bowl, whisk 1/3 cup each mayonnaise, sour cream, and Creole mustard, plus 1 teaspoon sugar until smooth.

4-Chop Additions: Finely chop 1 celery stalk, 3 hard-boiled eggs, slice 3 green onions, and chop 1 tablespoon fresh parsley.

5-Combine and Season: Fold potatoes, veggies, eggs, parsley, and dressing together. Add salt and pepper to taste. Sprinkle extra Creole seasoning on top.

6-Chill and Serve: Cover and refrigerate at least 1 hour. Serve chilled for picnics or potlucks.
