– 1 teaspoon paprika

– 1 small artisan romaine heart (about 3 cups chopped)

– 3 cups baby spring greens

– 1 cup assorted cherry or grape tomatoes, halved

– 2 to 3 radishes, thinly sliced (about Β½ cup)

– β…“ cup diced red onion

– 1 large avocado, sliced

– Β½ cup sliced almonds

– 2 to 3 hard-boiled eggs, halved (optional)

– Β½ cup creamy Greek yogurt dressing flavored with Dijon mustard and honey

Instructions

1-: Season the sliced chicken breasts with salt and pepper. Prepare a breading station with flour, whisked egg, and a mixture of panko bread crumbs, garlic powder, and paprika.

2-: Preheat an air fryer to 400Β°F. Dredge each chicken cutlet in flour, dip in egg, then coat with the bread crumb mixture.

3-: Spray the air fryer basket with nonstick cooking spray, place two breaded cutlets inside, spray the tops lightly, and cook for 4 minutes.

4-: Flip, spray again, and cook for an additional 4 to 5 minutes until the chicken is crispy and reaches an internal temperature of 165Β°F. Let the chicken rest.

5-: Toss the romaine, baby greens, tomatoes, radishes, and red onion in a salad bowl.

6-: Divide the salad among four bowls, top each with sliced chicken, avocado, sliced almonds, and halved eggs if using. Drizzle with the yogurt dressing and serve extra dressing on the side.
