Ingredients
– 2 lbs. (approximately 900 g) ground beef
– 1 large yellow onion, finely minced
– 2 boxes (6 oz each, about 170 g each) dried stuffing mix (savory herbs variety preferred)
– 1 1/3 to 1 1/2 cups (approximately 315 to 360 ml) whole milk for tenderizing the meat
– 2 large eggs for binding
– 2 tablespoons glaze (prepared from glaze ingredients below) for boosting moisture
– 1 teaspoon kosher salt
– 1/2 teaspoon black pepper
– 1 1/2 cups (360 ml) ketchup
– 1/4 cup (50 g) light brown sugar
– 2 tablespoons finely minced onion
– 1 tablespoon yellow mustard
– 2 teaspoons white vinegar
– 1/2 teaspoon black pepper
Instructions
1-Line a 6-quart or larger slow cooker with heavy-duty aluminum foil, pressing into the bottom and up two sides, then spray lightly with non-stick cooking spray.
2-Whisk all glaze ingredients together and set aside.
3-In a bowl, combine ground beef, minced onion, stuffing mix, milk, eggs, 2 tablespoons of the glaze, salt, and pepper. Mix gently using hands until just combined. Wear gloves if you prefer.
4-Shape the mixture into an oval loaf and place it into the foil-lined slow cooker.
5-Spread 1/2 cup (120 ml) of glaze on top, cover, and cook on LOW for approximately 6 hours or on HIGH for 3 hours until an internal temperature of 160ยฐF (71ยฐC) is reached.
6-Carefully lift the meatloaf out using the foil, place it on a baking sheet, spread 2/3 cup (160 ml) of glaze on top, and broil until the glaze is sticky and bubbly.
7-Serve sliced with remaining glaze for drizzling.
