🥐 Discover the delightful blend of croissant flakiness and muffin shape in these homemade Cruffins with sweet, customizable fillings.
🍯 Perfect for breakfast or dessert, they offer a fun and impressive treat that’s worth the time investment for flaky layers and rich flavors.

  • Total Time: 5 hours 45 minutes
  • Yield: 9 cruffins 1x

Ingredients

Scale

1 cup whole milk, warmed to about 110°F

2 and 1/4 teaspoons instant or active dry yeast

3 tablespoons granulated sugar

3 tablespoons butter (unsalted or salted, cut into pieces)

3 cups all-purpose flour (plus more as needed)

1 and 1/4 teaspoons salt

1 cup salted butter, slightly softened

1 tablespoon all-purpose flour

3/4 cup granulated sugar

1 tablespoon ground cinnamon

Optional fillings such as Nutella, jam, or apple pie filling

Instructions

1-First Steps: Mixing and Rising the Dough: Begin by mixing the warm milk, yeast, and sugar in a bowl until it turns foamy, which should take a few minutes. This activates the yeast and sets the foundation for a good rise. Next, add the butter, flour, and salt to form a soft dough, then knead it for about 5 minutes until it’s smooth and elastic. Let the dough rise in a greased bowl for around 2 hours until it almost doubles in size.

2-Building the Layers: Lamination Process: Once the dough has risen, roll it out into a 10×14 inch rectangle and pop it in the fridge for 20 minutes to chill. For the lamination, beat together the softened salted butter and 1 tablespoon of flour until smooth. Spread this mixture over the center of the dough, then fold the sides like a letter, roll it out again, fold once more, and refrigerate for 20 minutes. Repeat this lamination process three times to create those flaky layers everyone loves.

3-Shaping and Baking: After lamination, divide the dough into three portions and roll each into 8×12 inch rectangles. Sprinkle them with a mix of the 3/4 cup granulated sugar and 1 tablespoon ground cinnamon for that sweet coating. Cut the dough into 1-inch strips, stack three strips, and roll them into spiral shapes, then place them in a greased muffin pan. Let them rise for 1 hour in a warm spot.

4-Shaping and Baking Continued: Preheat your oven to 350°F and bake the cruffins for 25 to 28 minutes, or until they reach an internal temperature of 200°F. Once they’re done, let them cool a bit, then roll them in more cinnamon-sugar and fill with options like Nutella, jam, or apple pie filling using a piping bag. This whole process takes about 5 hours and 45 minutes, but the wait is worth it for that fresh-baked goodness. For adaptations, swap in plant-based alternatives for vegan versions or adjust proofing for gluten-free dough.
