  • Total Time: 1 hour 5 minutes
  • Yield: 4 large croissants 1x

Ingredients

Scale

1 sheet puff pastry (230250 g) Base for flaky layers

1 large egg for egg wash

2 tablespoons milk for egg wash

2 tablespoons sliced almonds for topping

60 g salted butter for almond filling

100 g almond flour Creates nutty flavor

75 g granulated sugar

1 teaspoon almond extract

1 teaspoon vanilla extract

1/4 teaspoon salt

100 g brown sugar for gingerbread filling Adds spice and sweetness

2 tablespoons all-purpose flour for gingerbread filling

1 tablespoon molasses

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon ground ginger

Powdered sugar for dusting after baking

Instructions

1-First, prepare the dough by combining the puff pastry with the almond filling made from butter, almond flour, granulated sugar, almond extract, vanilla extract, and salt.

2-Next, create the spiced gingerbread filling using brown sugar, molasses, all-purpose flour, cinnamon, nutmeg, and ginger, then spread it evenly over the almond layer.

3-Spread the almond filling over half of the puff pastry, then add the gingerbread filling on top, folding or rolling the pastry to form croissants while sealing edges tightly.

4-Chill the assembled croissants in the refrigerator for 15 to 20 minutes to maintain their shape during baking at 375ยฐF (190ยฐC) for 20-25 minutes.

5-After baking, allow them to cool slightly, then dust with powdered sugar and sprinkle sliced almonds on top for a professional finish.

In the first step, combine flour, yeast, brown sugar, and gingerbread spices in a large bowl, gradually adding cold butter cubes and milk until a smooth dough forms, then let it rise.

For the second step, roll out the dough and spread almond paste evenly, followed by sprinkling almond meal and sliced almonds.

The third step involves folding the dough into thirds and rolling it out again 2-3 times for flakiness.

In the fourth step, cut the dough into triangles and shape into croissants by rolling from the base to the tip, placing them on a lined baking sheet to proof.

Finally, preheat the oven, brush with egg wash, and bake until golden, about 18-22 minutes.
