Instructions

1-First, scrub the potatoes well and cut them into wedges. Preheat the grill to medium-high heat to get everything ready for cooking.

2-Next, lay out two large pieces of foil and divide the potatoes evenly, with about 1 pound per packet. Drizzle each with 1/4 cup olive oil and season with the minced garlic from 2 cloves, 1/2 teaspoon red pepper flakes, 1 teaspoon kosher salt, and 1 teaspoon black pepper.

3-Then, cover each packet with a second piece of foil and crimp the edges to seal them tightly, locking in moisture and flavor.

4-After that, place the packets on the grill and cook for about 20 minutes, flipping occasionally to help with even cooking.
