3-Then, cover each packet with a second piece of foil and crimp the edges to seal them tightly, locking in moisture and flavor.
4-After that, place the packets on the grill and cook for about 20 minutes, flipping occasionally to help with even cooking.
5-Finally, once the potatoes are tender, remove the top foil, sprinkle on the 4 to 5 ounces of grated sharp cheddar cheese, and return to the grill just until the cheese melts. Garnish with fresh chives before serving hot.
