  • Total Time: 55 minutes
  • Yield: 6 servings 1x

Ingredients

Scale

3 sweet potatoes

8 boneless, skinless chicken thighs

8 slices of bacon

3 to 4 broccoli crowns

2 teaspoons salt

ยฝ teaspoon black pepper

2 teaspoons smoked paprika

2 teaspoons garlic powder

2 teaspoons onion powder

1 tablespoon brown sugar

Olive oil for drizzling

Hot honey or regular honey for drizzling

Red pepper flakes (optional, to taste)

Instructions

1-Drizzle olive oil over the sweet potatoes, chicken, bacon, and broccoli (add broccoli later): Toss each with your hands to coat evenly for that perfect golden finish.

2-Combine 2 teaspoons salt, ยฝ teaspoon black pepper, 2 teaspoons smoked paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, and 1 tablespoon brown sugar; sprinkle this mix over the chicken and sweet potatoes. For the broccoli, use just salt and pepper if you like.

3-Toss gently to distribute the seasonings, then place the sweet potatoes and chicken pans in the oven.

4-After 20 minutes, toss the sweet potatoes and add the broccoli to the chicken and bacon pan.

5-Continue roasting for about 25 minutes more, checking that the chicken is fully cooked, broccoli is tender but crisp, and sweet potatoes are nicely browned.

6-Assemble your bowls with the roasted chicken, sweet potatoes, broccoli, and bacon. Drizzle with hot honey and sprinkle red pepper flakes for extra spice if desired.
