– 4 boneless, skinless chicken breasts

– 1 zucchini chopped
– 1 yellow squash chopped
– 1 medium onion chopped
– 1 cup hummus
– 1 tablespoon olive oil
– 2 lemons
– 1 teaspoon smoked paprika or sumac
Instructions
1-Preheat your oven to 450Β°F (230Β°C). Prepare one large or two smaller baking dishes with cooking spray.
2-Prepare the chicken by patting it dry with paper towels. Season with salt and pepper on both sides.
3-Prepare the vegetables by tossing zucchini, squash, and onion with olive oil in a bowl until coated. Season with salt and pepper.
4-For baking in one dish: Layer vegetables evenly on the bottom. Place chicken breasts on top. Spread 1 cup hummus evenly over chicken. Squeeze juice from 1 lemon over everything. Sprinkle with 1 teaspoon paprika or sumac. Thinly slice the remaining lemon and place slices between chicken and vegetables if desired.
5-For baking in two dishes: Place vegetables in one dish and chicken in the other.
6-Bake for 25-30 minutes, until chicken is cooked through and vegetables are tender.
7-Check for doneness by ensuring the chicken reaches an internal temperature of 165Β°F (74Β°C).
8-Remove from oven and serve immediately for the best texture and flavor.
