Ingredients

– 8 ounces uncooked pappardelle noodles

– Olive oil (amount as needed for cooking)

– 4 spicy Italian sausage links, casings removed

– 1 large onion, quartered and thinly sliced

– 1 Β½ teaspoons salt

– 1 teaspoon Italian seasoning

– Β½ teaspoon cracked black pepper

– 1 red bell pepper, cored and thinly sliced

– 1 yellow bell pepper, cored and thinly sliced

– 1 orange bell pepper, cored and thinly sliced

– 4 cloves garlic, pressed through garlic press

– Β½ cup white wine (such as Chardonnay)

– 1 (28 ounce) can diced tomatoes, with juice

– 2 tablespoons flat-leaf parsley, chopped

– ΒΌ cup fresh basil leaves, julienned, divided use

Instructions

1-Prepare pappardelle noodles: Prepare pappardelle noodles according to package instructions. Drain well and keep warm.

2-Heat olive oil: In a large, heavy-bottom pan over medium-high heat, add about 2 tablespoons olive oil.

3-Brown sausage: Crumble spicy Italian sausage into the pan and brown in oil until cooked through. Remove sausage from pan and set aside.

4-Caramelize onion: Add sliced onion to the pan with sausage drippings. Caramelize until golden, about 5 minutes, stirring to prevent burning. Add salt, Italian seasoning, and cracked black pepper; stir.

5-SautΓ© bell peppers: Add sliced bell peppers and sautΓ© with onions for about 2 minutes until slightly tender and golden.

6-Add garlic and wine: Add garlic; once aromatic, add white wine and reduce until almost completely evaporated.

7-Combine tomatoes and sausage: Add diced tomatoes with juice and return browned sausage to pan. Fold to combine.

8-Simmer mixture: Simmer mixture gently for 3 to 4 minutes to blend flavors. Turn off heat.

9-Finish sauce: Drizzle 2-3 tablespoons olive oil into sauce for silky richness. Stir in chopped parsley and half the julienned basil.

10-Toss noodles: Add cooked pappardelle noodles into sauce and gently toss to combine. Adjust seasoning if needed.

11-Serve: Serve by dividing into bowls. Garnish with remaining julienned basil. Optional toppings include shaved parmesan and extra olive oil drizzle.
