Ingredients
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups buttermilk
1/2 cup milk
2 tablespoons vegetable oil (or melted butter, cooled)
2 tablespoons applesauce
2 large eggs, separated
2 tablespoons sugar
1 1/2 tablespoons lemon zest
2 tablespoons lemon juice
1/3 cup sugar (or more to taste if sweeter)
2 tablespoons cornstarch
1 cup cold water
2 cups fresh blueberries (frozen works too)
1 1/2 tablespoons lemon juice
Instructions
1-Preheat the waffle iron and butter it if needed.
2-Whisk dry ingredients together.
3-Mix wet ingredients in a separate bowl.
4-Beat and fold in egg whites.
5-Combine batter and cook in the iron.
6-Prepare and add the blueberry syrup as described.
