1 cup (90 grams) desiccated coconut

2 tablespoons lemon zest (from 12 large lemons)

1/2 teaspoon vanilla essence

2 tablespoons honey

3 to 5 tablespoons lemon juice

1 tablespoon poppy seeds for extra flavor

More desiccated coconut for rolling the balls

Instructions

1-First, blend the 1 cup (140 grams) of raw cashews and 1 cup (90 grams) of desiccated coconut in a food processor until you get a fine crumb. This step creates the perfect base for the balls.

2-Next, add the 2 tablespoons of lemon zest, 1/2 teaspoon of vanilla essence, 2 tablespoons of honey, 3 to 5 tablespoons of lemon juice, and optionally 1 tablespoon of poppy seeds. Blend again until everything combines well, adjusting lemon juice or honey to get the right taste and texture.

3-Portion the mixture using level tablespoons, then roll it into firm balls with damp hands to keep them from sticking and for easy shaping.

4-Optionally, roll the balls in more desiccated coconut for added flavor and a nice coating.

5-Finally, chill the balls in the refrigerator for 1 hour to firm them up, making them ready for snacking or storage.
