πŸ‹ Brighten your day with these creamy lemon cheesecake bars that deliver a perfect balance of tangy and sweet flavors.
🍰 Easy to make and beautifully rich, these bars are a delightful treat for any occasion or dessert craving.

  • Total Time: 55 minutes
  • Yield: 16 bars 1x

Ingredients

Scale

1 Β½ cups (150 g) graham cracker crumbs

5 tablespoons unsalted butter, melted

β…“ cup (66 g) granulated sugar

16 ounces (453 g) cream cheese, softened to room temperature

ΒΎ cup (150 g) granulated sugar

1 tablespoon lemon zest

β…“ cup (80 ml) fresh lemon juice

1 teaspoon vanilla extract

1 large egg, at room temperature, lightly beaten

Confectioners’ sugar for dusting, optional

Instructions

1-First Step: Preheat your oven to 350ΒΊF and line an 8Γ—8 baking pan with aluminum foil, then lightly spray with nonstick spray. This sets the stage for a crust that holds together well.

2-Second Step: In a bowl, combine the graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this firmly into the bottom of the prepared pan to form the crust, then bake for 10 minutes and let it cool.

3-Third Step: Reduce the oven temperature to 300ΒΊF. In a large mixing bowl, beat the cream cheese until it’s smooth and creamy, then add the sugar and beat until well combined.

4-Fourth Step: Mix in the lemon zest, lemon juice, and vanilla extract until everything is fully incorporated. Gently fold in the egg using a silicone spatula to keep the filling light.

5-Fifth Step: Pour the filling over the cooled crust and spread it evenly. Bake for 30-35 minutes until the edges are set but the center is slightly jiggly.

6-Sixth Step: Let the bars cool to room temperature, then refrigerate for at least 8 hours before slicing. If you’re adapting for dietary needs, remember to use substitutes as noted earlier.
