– 2 cups (473 ml) 2% milk
– 4 tablespoons (56 g) unsalted butter divided for use in the sauce and topping
– ΒΌ cup (31 g) all-purpose flour for thickening
– 6 ounces (170 g) grated Gruyere cheese for nutty flavor
– 4 ounces (113 g) grated white cheddar cheese for tang
– 1 teaspoon salt to season
– Β½ teaspoon freshly ground black pepper to season
– 1 pound (454 g) chopped cooked lobster meat
– Β½ pound (227 g) cooked shrimp cut in half
– Β½ cup (54 g) Italian breadcrumbs
– A splash of dry sherry to enhance the flavor in the sauce

Instructions
1-: Bring salted water to a boil and cook ΒΎ pound (340 g) spiral pasta al dente per package. Drain and set aside.
2-: Heat 2 cups (473 ml) 2% milk until hot in a separate pot or microwave.
3-: Melt 2 tablespoons (28 g) unsalted butter in a saucepan over low heat. Stir in ΒΌ cup (31 g) all-purpose flour and cook for 2 minutes.
4-: Slowly whisk in the hot milk, cooking until smooth and thickened, stirring constantly.
5-: Remove from heat. Stir in 6 ounces (170 g) grated Gruyere, 4 ounces (113 g) grated white cheddar, 1 teaspoon salt, and Β½ teaspoon black pepper until melted. Add a splash of dry sherry if using.
6-: Fold in 1 pound (454 g) chopped cooked lobster meat, Β½ pound (227 g) cooked shrimp cut in half, and optional Β½ pound chopped cooked crab meat. Then mix in the cooked pasta until coated.
7-: Transfer to a greased casserole dish.
8-: Melt remaining 2 tablespoons (28 g) butter and mix with Β½ cup (54 g) Italian breadcrumbs. Sprinkle over top.
9-: Bake at 375 Β°F (191 Β°C) for 30-35 minutes until bubbly and golden brown. Let rest 5 minutes, serve warm.
