– 1/2 cup diced red bell pepper (any color can be used)

– 1/2 cup canned black beans, drained and rinsed

– 1/2 cup corn (grilled, skillet-charred, frozen, canned, or fresh sautéed in olive oil)

– 1/2 cup chopped fresh cilantro

– 1 minced jalapeño (adjust amount to taste)

– 3/4 cup mayonnaise

– 1/4 cup sour cream

– 1 1/2 tablespoons taco seasoning

– 2 tablespoons fresh lime juice

Instructions

1-In a large bowl, combine the coleslaw mix, diced red bell pepper, canned black beans, corn, chopped fresh cilantro, and minced jalapeño for the base of your slaw.

2-In a separate small bowl, mix the mayonnaise, sour cream, taco seasoning, and fresh lime juice until it’s smooth and well blended to create the dressing.

3-Pour the dressing over the slaw mixture and toss everything together to make sure every bite is coated evenly.

4-Serve it chilled, and enjoy it at potlucks, picnics, summer barbecues, or alongside your favorite Mexican meals for a refreshing twist.
