  • Total Time: 2 hours 5 minutes
  • Yield: 6 servings

Ingredients

– 1 1/3 cup all-purpose flour, spooned and leveled

– 1 tablespoon sugar

– 1/2 teaspoon salt

– 8 tablespoons unsalted butter, very cold

– 6 tablespoons ice water, or as needed for desired consistency

– 1 egg, beaten for egg wash

– 1 tablespoon turbinado sugar (optional for crust crunch and sweetness)

– 1 pound peaches (about 3-4 medium peaches or 3 cups sliced), preferably not overly ripe

– 1/4 cup granulated sugar

– 1 tablespoon all-purpose flour

– 1/2 teaspoon cinnamon

– 1/2 teaspoon vanilla extract

– 1/2 tablespoon unsalted butter, cut into small pieces

Instructions

First Step: Preheat your oven to 375ยฐF (190ยฐC) and prepare a baking sheet lined with parchment paper.

Second Step: In a mixing bowl, combine the flour, sugar, and salt; cut in cold butter until the mixture resembles coarse crumbs.

Third Step: Add cold water incrementally and mix until a dough forms; wrap in plastic and chill for at least 30 minutes.

Fourth Step: Prepare the peach filling by tossing sliced peaches with sugar, cornstarch, and vanilla extract; set aside.

Fifth Step: Roll out the chilled dough on a floured surface into a rough circle about 12 inches wide.

Sixth Step: Transfer the dough to the baking sheet and arrange the peach mixture in the center, leaving a 2-inch border.

Seventh Step: Fold the edges of the dough over the peaches, pleating as needed to enclose the filling partially.

Eighth Step: Brush the crust with a plant-based milk for vegan option or regular milk for traditional recipes; sprinkle with sugar if desired.

Ninth Step: Bake for 40-45 minutes or until the crust is golden and peaches are tender.

Final Step: Remove from oven, let cool slightly, then serve warm or at room temperature. Adjust timing and ingredients for dietary preferences as needed.
