Ingredients

– 2 tablespoons olive oil

– 1/2 cup chopped yellow onion

– 1/2 cup chopped green bell pepper

– 3 cloves garlic, minced

– 1 large egg

– 1 pound (93% lean) ground beef

– 1/2 cup breadcrumbs

– 1/4 cup 2% milk

– 2 tablespoons ketchup

– 1/4 cup ketchup for topping

– 1 tablespoon Worcestershire sauce

– 1 teaspoon salt

– 1 teaspoon dried parsley leaves

– 1/2 teaspoon ground black pepper

– 4 ounces mozzarella cheese, chopped into 1/2 inch cubes

Instructions

1-First, preheat your oven to 350°F. Begin by heating 2 tablespoons of olive oil in a skillet over medium-high heat, then sauté 1/2 cup chopped yellow onion and 1/2 cup chopped green bell pepper for 5-6 minutes until they soften. Add 3 cloves of minced garlic and cook for another minute before removing from the heat.

2-Next, in a large bowl, scramble 1 large egg. Add 1 pound of 93% lean ground beef, 1/2 cup breadcrumbs, 1/4 cup 2% milk, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon salt, 1 teaspoon dried parsley leaves, and 1/2 teaspoon ground black pepper to the egg mixture. Once the sautéed vegetables have cooled, mix them in thoroughly by hand, then stir in 4 ounces of mozzarella cheese chopped into 1/2 inch cubes.

3-Transfer the mixture to a 9×13 inch baking dish, shape it into a loaf, and spread the remaining 1/4 cup ketchup evenly on top. Bake for 55 minutes, then let it cool for 10 minutes before slicing into 10 pieces.
