Ingredients

Scale

1 bunch kale (stems removed and chopped)

1/3 cup olive oil, avocado oil, or flaxseed oil (plus extra if needed)

1/4 cup pine nuts or toasted walnuts (hemp seeds as an alternative for allergies)

1/4 cup grated Parmesan cheese

2 cloves garlic (chopped)

2 tablespoons lemon juice

1 teaspoon red pepper flakes

2 tablespoons honey for drizzling

Instructions

1-First, pulse the kale, garlic, cheese (if using), lemon juice, red pepper flakes, salt, and pine nuts in a food processor until finely chopped.

2-Next, add the oil and process until the mixture is smooth and spreadable. Adjust with extra oil if needed for the right consistency.

3-Preheat your oven to 350 degrees Fahrenheit and place the pita rounds on a baking sheet.

4-Spread the kale pesto evenly over each pita, then top with the halved grapes, crumbled cheese, and chopped walnuts.

5-Bake for 8-10 minutes until everything is warmed through and the edges are slightly crisp.

6-Finally, remove from the oven, let it cool a bit, drizzle with honey, cut into pieces, and serve right away for the best taste.
