  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

– 3 tablespoons butter, divided

– 2 eggs, whisked

– 2 medium carrots, peeled and diced

– 1 small white onion, diced

– 1/2 cup frozen peas

– 3 cloves garlic, minced

– Salt and pepper to taste

– 4 cups cooked and chilled quinoa

– 3 green onions, thinly sliced

– 3 to 4 tablespoons soy sauce, or more to taste

– 2 teaspoons oyster sauce (optional)

– 1/2 teaspoon toasted sesame oil

Instructions

1-First, heat 0.5 tablespoons of butter in a large skillet over medium-high heat until melted, then add the whisked eggs and scramble them while stirring occasionally. Once done, remove the eggs and set them aside to keep them fluffy.

2-Next, add 1 tablespoon of butter to the skillet and heat it up before tossing in the diced carrots, onion, peas, and minced garlic. Season with salt and pepper, then sautรฉ for about 5 minutes until the vegetables soften and release their flavors. This step builds a solid base for the dish, making sure everything tastes fresh and vibrant.

3-Increase the heat to high and add the remaining 1.5 tablespoons of butter, stirring until itโ€™s fully melted. Discover the health benefits of quinoa, which makes this recipe a nutritious choice. Right away, mix in the 4 cups of cooked and chilled quinoa, 3 green onions, 3 to 4 tablespoons of soy sauce, and 2 teaspoons of oyster sauce if youโ€™re using it. Stir everything together and fry for about 3 minutes to let the flavors blend.

4-Then, add the scrambled eggs back into the skillet and mix well for an even distribution. Finally, stir in the 1/2 teaspoon of toasted sesame oil, combine it all, and take the skillet off the heat. Serve it warm for the best taste and texture, creating a meal thatโ€™s ready in no time and full of wholesome goodness.
