Ingredients
– Olive oil
– Β½ lb shiitake mushrooms, thinly sliced
– Kosher salt
– Β½ lb spaghetti or other long pasta
– 4 tablespoons butter
– ΒΌ cup honey
– 1 large rosemary sprig
– 2 ounces freshly grated parmesan cheese, plus more for topping
– Freshly cracked black pepper
Instructions
1-Boil a large pot of heavily salted water. This is for your pasta. Remember, the water should be as salty as the sea – this is your only chance to season the pasta itself. Don’t be shy with the salt!
2-Heat olive oil in a large skillet over medium-high. While your water is coming to a boil, place your skillet on the stove and add a couple of tablespoons of olive oil.
3-Cook mushrooms in a single layer. Add your thinly sliced shiitake mushrooms to the hot skillet, making sure they’re in an even layer. If needed, cook in batches to avoid overcrowding the pan, which would cause the mushrooms to steam rather than crisp up. Cook until golden and crispy, then transfer to paper towels and season with salt.
4-Cook spaghetti in boiling salted water. Once your pasta water is boiling, add the spaghetti and cook for 1 minute less than the package directions. We want it slightly al dente as it will continue cooking in the sauce later.
5-Wipe skillet clean and return to medium heat. After removing the mushrooms, give your skillet a quick wipe and return it to the stove.
6-Add butter, honey, and rosemary. Add 4 tablespoons of butter, ΒΌ cup of honey, and 1 large rosemary sprig to the skillet. Let this melt and simmer for about 2 minutes on medium-low heat.
7-Whisk in reserved pasta water. Before draining your pasta, remember to reserve at least 2 cups of the starchy pasta water. Add 1 cup to the skillet with your honey butter mixture, whisking to combine. Bring to a simmer and cook for 2-3 minutes until slightly reduced.
8-Combine pasta with the sauce. Drain your pasta and add it directly to the skillet with the sauce. Stir well to coat every strand of pasta.
9-Add parmesan and adjust consistency. Add 2 ounces of freshly grated parmesan cheese to the skillet and stir until melted. If the sauce seems too thick, gradually add more of your reserved pasta water until you reach the desired consistency.
10-Incorporate the crispy mushrooms. Gently fold your crispy mushrooms back into the pasta, heating through for about a minute. Taste and adjust seasoning with additional salt if needed.
11-Serve immediately. Plate your pasta and top it with extra parmesan cheese and a generous crack of freshly ground black pepper.
