Ingredients
– 12 slices sandwich bread
– 8 slices bacon, cut in half
– 4 tablespoons mayonnaise, divided
– 1 tablespoon prepared basil pesto
– 1 tablespoon prepared sun-dried tomato pesto (or pureed sun-dried tomatoes)
– 1/2 pound shaved ham
– Romaine or green leaf lettuce
– 4 avocados, peeled and sliced
– 1/2 pound shaved turkey
– 4 slices cheese (Swiss, mozzarella, or similar)
– Potato chips, for serving
Instructions
1: Toast bread until lightly golden brown; set aside to cool.
2: Fry bacon until barely crisp; drain and set aside.
3: Mix 2 tablespoons mayonnaise with basil pesto in one bowl and the remaining 2 tablespoons with sun-dried tomato pesto in another. Refrigerate both.
4: Spread basil pesto mayonnaise on one side of 2 bread slices. Layer ham and lettuce on one; avocado and bacon on the other. Place the avocado-bacon slice atop the ham-lettuce slice, filling-side down.
5: Spread sun-dried tomato pesto mayonnaise on top. Add turkey and lettuce. Spread sun-dried tomato pesto mayonnaise on one side of a third bread slice, then top with avocado, bacon, and cheese. Place this slice filling-side down on the sandwich. Repeat with remaining ingredients.
6: Cut diagonally into halves, then quarters. Secure with toothpicks if desired. Serve with potato chips.
