– ½ cup diced onion

– 3 lb sweet potatoes cut in 1-inch slices
– 2 tablespoons olive oil
– 1 ½ teaspoons dried thyme
– 1 teaspoon garlic granules

– ½ cup ketchup
– 2 teaspoons honey
– 1 tablespoon Dijon mustard
Instructions
1-Preheat the oven to 350°F. Heat 1 tablespoon olive oil in a skillet over medium heat, and sauté the diced onion until soft and translucent, adding the minced garlic during the last minute, then remove from heat.
2-On a large sheet pan, arrange the sweet potatoes in an even layer, leaving space for the meatloaf. Drizzle 2 tablespoons olive oil over the potatoes and season with 1 ½ teaspoons dried thyme, 1 teaspoon garlic granules, 1 ½ teaspoons kosher salt, and 1 teaspoon freshly ground black pepper.
3-In a large bowl, combine 1 lb ground beef, 1 lb ground pork, 1 ½ cups quick-cooking oats, 2 large eggs lightly whisked, 1 cup tomato juice, the sautéed onion and garlic, 2 ½ teaspoons kosher salt, and 1 teaspoon freshly ground black pepper. Mix well until fully combined with no individual streaks of ingredients.
4-Shape the meat mixture into a loaf on the sheet pan beside the sweet potatoes and place the pan in the oven.
5-Meanwhile, mix ½ cup ketchup, 2 teaspoons honey, and 1 tablespoon Dijon mustard in a small bowl for the topping. After about 40 to 50 minutes, when the meatloaf is browned and reaches an internal temperature of 150°F, spread the ketchup sauce over the top and return to the oven for another 15 minutes to caramelize.
6-Remove from oven and let rest for 10 minutes before slicing and serving.
