  • Total Time: 40 to 45 minutes
  • Yield: 4 to 6 servings 1x

Ingredients

Scale

1 recipe of pizza dough or 1 to pounds store-bought dough at room temperature

Cornmeal for dusting the pan

Olive oil for drizzling and sautéing

2 cups fresh spinach

1 clove garlic, chopped

⅔ cup pizza sauce (homemade or store-bought)

¾ cup grated low-moisture, part-skim mozzarella cheese (about 2 ounces)

¾ cup grated provolone cheese (about 2 ounces) or more mozzarella if preferred

¼ cup grated Parmesan cheese

¾ cup cherry tomatoes, halved

Fresh basil leaves for topping

Red pepper flakes for garnish

Instructions

1-Initial Preparation: First, let the pizza dough sit at room temperature for at least 1 hour if it was refrigerated. This step helps avoid tearing and makes shaping simple. Next, preheat your oven to 450 degrees Fahrenheit to get that perfect golden crust.

2-Assembling the Pizza: 1. Dust a 13×9 inch quarter sheet pan or jelly roll pan generously with cornmeal to prevent sticking.
2. Stretch the pizza dough to fit the pan, pressing it into the corners and edges for an even base.
3. Heat olive oil in a skillet over medium heat and sauté garlic and spinach with a pinch of salt until wilted, about 1 minute.
4. Spread ⅔ cup pizza sauce evenly over the dough, leaving a ½-inch border around the edges.
5. Sprinkle ¾ cup grated mozzarella and ¾ cup grated provolone cheeses all the way to the edges.
6. Add the sautéed spinach and garlic over the cheese, then sprinkle ¼ cup grated Parmesan cheese.
7. Arrange ¾ cup halved cherry tomatoes on top, cut side up, and drizzle with olive oil.

3-Baking and Serving: Bake the pizza for 20 to 25 minutes until the crust is golden and the cheese is browned and bubbling. Let it cool for 5 minutes before adding fresh basil leaves and red pepper flakes. Slice and serve right away for the best experience.
