– 1 1/2 cups uncooked brown rice

– 1 lb medium shrimp, peeled and deveined
– 1 medium onion, chopped
– 2 cloves garlic, minced
– 2 celery stalks, chopped
– 2 bell peppers (1 green, 1 orange), chopped
– 1 lb ground beef or ground pork sausage
– Salt and black pepper to taste
– 1/2 teaspoon cumin
– 2 scallions, chopped
Instructions
1-Cook 1 1/2 cups uncooked brown rice according to package instructions, adding 1 bay leaf, 1/4 teaspoon salt, 1/8 teaspoon cayenne pepper, 1/8 teaspoon paprika, and 1/8 teaspoon thyme for extra taste.
2-When the rice is nearly done, heat oil in a skillet over medium-high heat and cook 1 lb medium shrimp, peeled and deveined, for about 5 minutes until done, then set aside.
3-Discard any liquid from the skillet, add more oil, and sautΓ© 1 medium onion (chopped), 2 cloves garlic (minced), 2 celery stalks (chopped), and 2 bell peppers (1 green and 1 orange, chopped) over medium heat until soft, about 5 minutes.
4-Season the vegetables with salt, black pepper to taste, 1/2 teaspoon cumin, and the remaining 1/8 teaspoon cayenne pepper, 1/8 teaspoon paprika, and 1/8 teaspoon thyme.
5-Add 1 lb ground beef or ground pork sausage to the skillet and cook for 10 to 15 minutes until fully cooked.
6-Mix in the cooked rice and shrimp, tossing everything well, then cover and let it cook for a couple of minutes to blend the flavors.
7-Serve warm, sprinkled with 2 scallions (chopped), for a fresh finish.
