– mustard seeds
– peppercorns
– anise seeds
– bay leaves
– crushed red pepper flakes
– smoked seitan as a substitute for corned beef
– tempeh as a substitute for corned beef
– vegetable broth as a substitute for beef broth
– cauliflower for fewer carbs
Instructions
1-First, rinse the corned beef brisket under cold water to remove excess salt, then pat it dry. This step helps the flavors soak in evenly.
2-Place the 3 to 4 lb flat cut brisket in your slow cooker. Pour in 4 cups of beef broth and sprinkle the seasoning packet over the meat.
3-Cover and cook on low for 8 to 9 hours. The total cooking process is about 8 hours and 5 minutes.
4-Halfway through, around 4 to 4.5 hours in, add the 4 carrots cut into pieces and 8 small red potatoes halved or quartered. This keeps them from getting mushy.
5-If using half a head of cabbage coarsely chopped, toss it in during the last hour to avoid strong odors and keep it crisp.
6-Once done, remove the corned beef and slice it across the grain. The meat should be tender and easy to pull apart. Serve with veggies and some cooking liquid as a tasty jus.
