Ingredients

– 2 pounds chicken breasts cut into four 8-ounce cutlets

– Chipotle chili powder for dry rub

– Cumin for dry rub

– Smoked paprika for dry rub

– Onion powder for dry rub

– Garlic powder for dry rub

– Salt for dry rub

– A dash of cayenne pepper for the dry rub, adjustable for spice level

– 2 teaspoons coconut oil or another high-heat oil for cooking

Instructions

1-First, mix the spices in a small bowl: chipotle chili powder, cumin, smoked paprika, onion powder, garlic powder, salt, and a dash of cayenne pepper to make the dry rub.

2-Evenly sprinkle the seasoning over both sides of the 2 pounds of chicken breasts, which are cut into four 8-ounce cutlets, for full flavor coverage.

3-Heat 1 teaspoon of the coconut oil or high-heat oil in a skillet over medium heat.

4-Add the chicken in a single layer and cook for 6 to 7 minutes until browned on one side.

5-Flip the chicken, add the remaining 1 teaspoon of oil, and cook for another 6 to 7 minutes until the internal temperature reaches 160 degrees Fahrenheit and the juices run clear.

6-Remove the chicken from the heat, cover with foil, and let it rest for at least 5 minutes before serving to lock in the juices.
