πŸ₯’ Enjoy a fresh twist on pasta with Spaghetti and Crispy Zucchini, combining vibrant veggies with a crunchy, cheesy topping.
🍝 This easy and flavorful recipe is perfect for a satisfying weeknight meal that pleases the whole family.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

– 1/2 pound uncooked spaghetti

– One 24-ounce jar of favorite store-bought spaghetti sauce (about two-thirds of the jar)

– 1 zucchini, cut into 1/4 inch-thick rounds (about 2 to 3 cups)

– 1 egg

– 1 cup panko breadcrumbs

– 1/2 cup grated Parmesan cheese (optional)

– 1 tablespoon lemon zest (optional)

– 1 teaspoon salt and pepper to taste

– 1 teaspoon Italian seasoning

– 1/2 teaspoon garlic powder

– 1/2 cup cheese for topping (shredded mozzarella and provolone, fresh mozzarella slices, or goat cheese)

– 1/4 cup fresh basil leaves for topping

Instructions

1-First Steps: Getting Started Begin by cooking the spaghetti according to package instructions, then drain and mix it with the spaghetti sauce. For added flavor, toss in extra olive oil, salt, and pepper as needed. While the pasta cooks, preheat your oven to 400 degrees Fahrenheit to prepare for the zucchini.

2-Next, beat the egg in a large bowl and add the zucchini rounds, tossing them to coat evenly. Mix in the panko breadcrumbs, Parmesan cheese, lemon zest, salt, pepper, Italian seasoning, and garlic powder. Arrange the coated zucchini on a baking sheet with space between each piece, spoon any leftover crumb mixture around, and drizzle with olive oil.

3-Baking and Finishing Touches: Bake the zucchini for 15 to 20 minutes until it’s golden brown. Once done, sprinkle your choice of cheese on top and return it to the oven or broil for about 5 minutes until the cheese melts. Finally, serve the spaghetti in bowls, topped with the cheesy crispy zucchini and fresh basil leaves, and add extras like olive oil, red pepper flakes, or lemon juice if you like.
