Ingredients

– 1/4 cup olive oil for the garlic cilantro lime sauce

– 1/2 teaspoon salt for the garlic cilantro lime sauce

– Juice of 2 limes for the garlic cilantro lime sauce

– 1/2 cup sour cream or full-fat Greek yogurt for the garlic cilantro lime sauce

– 1/4 cup water (optional, to thin sauce) for the garlic cilantro lime sauce

– 2 teaspoons chili powder for the shrimp taco spice mix

– 2 teaspoons cumin for the shrimp taco spice mix

– 1/2 teaspoon onion powder for the shrimp taco spice mix

– 1/2 teaspoon garlic powder for the shrimp taco spice mix

– 1/4 teaspoon cayenne pepper (adjust to taste) for the shrimp taco spice mix

– 1 teaspoon coarse sea salt for the shrimp taco spice mix

– 1 pound large shrimp, peeled and deveined, tails removed for the tacos

– 2 to 3 cups shredded green or purple cabbage for the tacos

– 8 small tortillas (corn or flour) for the tacos

– 2 avocados for the tacos

– 1/4 cup Cotija cheese (or feta as substitute) for the tacos

– Lime wedges for serving for the tacos

Instructions

1-First, whip up that sauce to set the stage for flavor. Blend 1/4 cup olive oil, 1/2 cup chopped green onions, 1/2 cup cilantro leaves, 2 cloves garlic, 1/2 teaspoon salt, juice of 2 limes, 1/2 cup sour cream or full-fat Greek yogurt, and 1/4 cup water if needed until itโ€™s mostly smooth. Isnโ€™t it cool how a few simple ingredients can create such a zesty base?

2-Next, mix up your slaw by tossing 2 to 3 cups shredded green or purple cabbage with some of that sauce save the rest for topping later. Now, for the star of the show: pat 1 pound large shrimp dry and coat them with the spice mix of 2 teaspoons chili powder, 2 teaspoons cumin, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon cayenne pepper, and 1 teaspoon coarse sea salt.

3-Heat a drizzle of oil in a skillet over medium-high heat and cook the shrimp for 5 to 8 minutes, flipping them occasionally until theyโ€™re done.

4-Finally, assemble your tacos by smashing the 2 avocados and layering them on 8 small tortillas with the slaw, shrimp, 1/4 cup Cotija cheese or feta, lime wedges, and extra sauce. There you go tacos ready to enjoy!
