Ingredients

– Β½ lb (about 225g) penne pasta

– 1 small yellow onion, diced (approximately 340g or 1.5 cups)

– 2 cloves garlic, minced (about 1 tablespoon)

– 1 tablespoon olive oil

– 14.5 oz (approximately 411g) can diced tomatoes

– Β½ teaspoon dried oregano

– Β½ teaspoon dried basil

– β…› teaspoon crushed red pepper flakes

– Β½ teaspoon salt

– Β½ teaspoon freshly cracked black pepper

– 2 tablespoons tomato paste

– Β½ cup (120ml) water

– 2 oz (about 57g) cream cheese

– ΒΌ cup (about 30g) grated Parmesan cheese

– 4 oz (about 115g) fresh spinach

Instructions

1- Gather all ingredients and bring a large pot of water to a boil. Cook the pasta until tender, about 7-10 minutes. Drain and set aside.

2- While pasta cooks, dice the onion and mince the garlic.

3- In a large skillet, heat olive oil over medium heat. Add diced onion and garlic and sautΓ© for 3-5 minutes until onions are soft and translucent.

4- Add diced tomatoes with juices, dried oregano, dried basil, crushed red pepper, salt, and black pepper to the skillet. Stir to combine.

5- Stir in tomato paste and water, cooking until the sauce thickens.

6- Reduce heat to low. Add pieces of cream cheese and whisk until melted and creamy.

7- Stir in grated Parmesan cheese until fully incorporated.

8- Add fresh spinach and gently cook until wilted, about 2-3 minutes.

9- Mix drained pasta into the skillet, coating it thoroughly with the creamy tomato sauce.

10- Adjust seasoning with salt and pepper if needed.

11- Serve warm.
