– 2 pounds (about 900 grams) of fresh strawberries, hulled and halved
– 1 cup (200 grams) granulated sugar, divided
– 9 tablespoons (about 130 grams) unsalted butter
– 2ΒΌ cups (280 grams) all-purpose flour
– 2Β½ teaspoons baking powder
– 1ΒΌ cups (300 ml) whole milk
– 2 teaspoons vanilla extract
– Β½ teaspoon kosher salt
Instructions
1-Preheat the oven to 350Β°F (175Β°C). This lower temp ensures even baking for the perfect crust.
2-Macerate the strawberries. Mix 2 pounds hulled and halved fresh strawberries with β cup (65 grams) sugar. Let sit to release juices.
3-Melt the butter. Place 9 tablespoons unsalted butter in a 13Γ9-inch (33Γ23 cm) baking dish. Put in the oven for about 10 minutes until melted.
4-Mix the batter. In a bowl, whisk 2ΒΌ cups flour, 2Β½ teaspoons baking powder, Β½ teaspoon salt, and remaining β cup sugar. Stir in 1ΒΌ cups milk and 2 teaspoons vanilla until just combined. Do not overmix for tender biscuit topping.
5-Assemble. Pour batter over melted butter. Spoon strawberries evenly on top, discarding excess liquid to avoid sogginess.
6-Bake for 55 to 60 minutes until golden and bubbly. The edges will caramelize nicely.
7-Cool 15 minutes before serving. Pair with vanilla ice cream if you like.
