46 Bell Peppers (any color: green, yellow, red, orange)

1 tablespoon Olive Oil

1 lb Ground Beef (can substitute with ground turkey, chicken, pork, sausage, tofu, or other options)

1 medium Onion, chopped

1 Jalapeno Pepper, chopped (optional for spice)

5 cloves Garlic, chopped

14.5 ounces Fire Roasted Tomatoes (canned, diced tomatoes or tomato sauce can be used)

1 cup Shredded Cheese (cheddar, mozzarella, pepperjack, or a blend)

1 tablespoon Paprika

1 teaspoon Dried Oregano

1 teaspoon Dried Basil

Salt: to taste

Pepper: to taste

1 cup Cooked Rice (white, brown, or wild rice)

Fresh chopped parsley (for garnish)

Red pepper flakes (for garnish)

Instructions

1-Preheat the oven and prepare the peppers: Start by preheating your oven to 375°F (190°C) and get your bell peppers prepped wash them, slice off the tops, and scoop out the seeds and membranes.

2-Sauté onions, garlic, and jalapeno: In a large skillet, heat your olive oil and sauté the chopped onion, garlic, and jalapeno if you’re adding spice, until they’re soft and aromatic, about 3-4 minutes.

3-Cook the ground meat and mix: Next, add the ground beef or your chosen substitute and cook it until browned and fully done, seasoning as you go. Stir in the cooked rice, fire roasted tomatoes, paprika, oregano, basil, salt, and pepper to blend all those wonderful flavors.

4-Stuff the peppers and bake: Stuff the mixture into your prepared peppers, top with shredded cheese, and pop them in the oven! Bake for 30-35 minutes.

5-Garnish before serving: Garnish with fresh parsley and red pepper flakes before serving.
