Ingredients

2 cups cherry tomatoes, washed and halved

1 small red onion, diced

1 large orange bell pepper, diced

1 lb. tortellini, cooked

4 cups butter leaf lettuce, washed and patted dry (or lettuce of choice)

1/2 cup feta cheese (or mini mozzarella balls)

Salt and pepper to taste

1/2 cup olive oil

1/4 cup red wine vinegar

23 Tbsp. lemon juice

2 cloves garlic, minced

2 tsp. Dijon mustard

1 tsp. dried basil

1 tsp. dried oregano

Salt and pepper to taste

Instructions

1-Cook the tortellini: Cook the tortellini according to the package directions until it’s al dente, which usually takes about 10 minutes. Once done, drain it and rinse under cold water to keep it from getting mushy.

2-Prepare the vinaigrette: Mix up the vinaigrette by shaking all the ingredients together in a sealed jar until they’re well blended. This homemade dressing adds a fresh zing to your salad.

3-Divide the vinaigrette: Divide the vinaigrette evenly among the four mason jars to form the base layer.

4-Layer the ingredients: Add the halved cherry tomatoes on top of the vinaigrette, followed by the cooked tortellini. Then, stack on the diced orange bell pepper, feta cheese, and diced red onion in any order you like.

5-Finish and store: Finish with the torn butter leaf lettuce on top to maintain its crunch. Seal the jars and pop them in the fridge until you’re ready to eat. When it’s time, just shake the jar or pour it out for a tasty meal.
