Ingredients
– Cooked, chilled rice (white or brown)
– 3 tablespoons butter, divided
– 2 large eggs, whisked
– 2 medium carrots, peeled and diced
– 1 small white onion, diced
– 1/2 cup frozen peas
– 3 cloves garlic, minced
– 3 green onions, thinly sliced
– 3 to 4 tablespoons soy sauce, or more to taste
– 2 teaspoons oyster sauce, optional
– 1/2 teaspoon toasted sesame oil
– Salt and black pepper to taste
Instructions
1-Heat half a tablespoon of butter in a sauté pan over medium-high heat. Add the whisked eggs and scramble until cooked, then remove them and set aside.
2-Add 1 tablespoon of butter to the pan. Sauté the carrots, onion, peas, and garlic with salt and pepper until softened, which takes about 5 minutes.
3-Increase the heat to high. Add the remaining 1 1/2 tablespoons of butter, then mix in the chilled rice, green onions, soy sauce, and oyster sauce if you’re using it. Stir everything together and sauté for 3 minutes, letting the rice brown a bit. Remember to stir occasionally and let it rest briefly between stirs for that crispy edge.
4-Add the scrambled eggs back into the pan and stir to combine.
5-Remove from heat and stir in the toasted sesame oil.
6-Taste and adjust seasoning with extra soy sauce, salt, or pepper as needed.
7-Serve immediately or refrigerate for up to 3 days.
