2-Step 2: Process Until Smooth Process the mixture for 1 to 2 minutes, stopping occasionally to scrape down the sides of the food processor bowl. Continue processing until the mixture is completely smooth, light, and creamy. The key is to whip it long enough to break down the graininess of the ricotta and transform it into a velvety-smooth dip.
