Ingredients

– 8 bone-in, skin-on chicken thighs

– 1 red onion, cut into wedges

– 2-3 garlic cloves, finely minced (adjust quantity as desired)

– 3 tablespoons extra virgin olive oil

– 1 lemon, juiced

– 1 lemon, sliced into rings

– 2 tablespoons zaatar

– 1 tablespoon sumac

– 2 teaspoons 7-spice blend (commonly includes coriander, allspice, cumin, cloves, black pepper, cinnamon, and nutmeg; can substitute with ground coriander, cumin, and cinnamon if unavailable)

– Salt and freshly cracked pepper to taste (starting point: 3/4 teaspoon kosher salt per pound of meat)

Instructions

1-In a large bowl, combine the 8 bone-in, skin-on chicken thighs, 1 red onion cut into wedges, 2-3 finely minced garlic cloves, 3 tablespoons extra virgin olive oil, juice from 1 lemon, slices from 1 lemon, 2 tablespoons zaatar, 1 tablespoon sumac, 2 teaspoons 7-spice blend, and salt and pepper to taste. Toss everything well to coat the chicken evenly.

2-Refrigerate and let it marinate for 1 to 2 hours, or up to 24 hours if you want even more flavor.

3-Preheat your oven to 375ยฐF. Move the chicken, onions, and all the marinade to a baking sheet or oven-safe dish.

4-Roast for 25 to 30 minutes until the chicken hits an internal temperature of 170ยฐF and the skin turns brown and crispy. If you want it crispier, broil for another 5 minutes.

5-Once done, garnish with chopped parsley and serve it up with sides like rice, potatoes, or a fresh salad for a complete meal.
