– 8 ounces (about 227 grams) cherry tomatoes cut in half lengthwise for the salad

– 5 ounces (about 142 grams) small fresh mozzarella balls for the salad

– Salt and pepper to taste for seasoning the salad

Instructions

1-First, wash all fresh produce thoroughly to remove any dirt. Thinly slice the 2 medium zucchinis with ends removed for a crisp base.

2-Next, cut the 8 ounces of cherry tomatoes in half lengthwise and slice the 6 large fresh basil leaves thin.

3-Then, in a large bowl, combine the zucchini, tomatoes, basil leaves, and 5 ounces of small fresh mozzarella balls. Prepare the homemade dressing by mixing 2 tablespoons white wine vinegar, 2 tablespoons extra virgin olive oil, 2 tablespoons fresh lemon juice, 1 clove garlic finely minced, 1 tablespoon minced shallot, and 2 large fresh basil leaves sliced thin in a small bowl.
